Traditional Noodle Dish with Minced Meat and Walnuts

Recipe

For the dish known as Öllüğün Körü, water is first brought to a boil in a pot. Fresh noodles are then added to the boiling water, cooked until tender, and drained using a colander. Butter is melted in a pan and removed from the heat once it begins to foam, after which it is mixed with the noodles. Separately, 200 grams of minced meat is sautéed. To prevent the meat from becoming grainy, two tablespoons of water are added during cooking. Walnuts, spices, salt, and parsley are then incorporated, and the mixture is sautéed briefly. The minced meat mixture is poured over the noodles and served. According to a local legend, the origin of the dish’s name is as follows: Two neighbors once lived side by side. One of them greatly enjoyed cooking, while the other would ask every day, “What did you cook today?”—not out of curiosity, but in the hope of receiving a portion. Out of compassion, the woman would share her food each time. One day, her husband was ill and bedridden. While she was preparing a noodle dish in the kitchen, her door was knocked again, and the neighbor asked the same question. Feeling distressed that day, the woman replied, “Öllüğün körü.” Her husband, lying inside, overheard this and said, “Bring the öllüğün körü so we can eat it as well.” From that moment on, the dish came to be known by this name.
